The next couple of posts will highlight great liver recipes. Many people say they don't like liver. Well, maybe it is because of the way it was prepared, and the type and age of the liver. Our liver is from young animals so you don't have the strong flavor, plus it is more tender because of the age.

Callicrate Beef Meatloaf

Meat Loaf Recipe
Ingredients

1-1/2 pounds Callicrate ground beef.
3/4 cup Quaker® Oats
3/4 cup finely chopped onion
1/2 cup catsup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Preparation

Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly.

Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef, until not pink in center and juices show no pink color.

As good as the meatloaf is, it would not be complete without the sauce. Mom formed the mixture into a loaf and placed it in the middle of a roast pan to cook. Twenty minutes before it was done, the grease/liquid was drained off. She then covered the meatloaf with 1/2 cup of grated onion, followed by 1 cup of (Heinz) ketchup mixed with 4T of brown sugar, 4T vinegar, 2T Worchestershire Sauce; heated mixed ingredients but did not boil.

Recipe for Callicrate Beef Liver and Onions

Liver and Onions Recipe




Ingredients

1¼ lb calves liver, thinly sliced
½ to 1 cup of flour, seasoned with
Salt, pepper, paprika, dry mustard to taste
3 teaspoons bacon fat
2 yellow onions, sliced thin

Method

1 Dredge the calves liver in seasoned flour. Set aside.


2 Heat a large cast iron skillet on medium high heat. Add a teaspoon of bacon fat. Sauté the onions until translucent, a couple of minutes. Remove onions from pan with a slotted spoon. Set aside onto a serving dish.

3 Add a couple more teaspoons of bacon fat to the skillet. Add the calves liver slices, working in batches. Fry until browned on both sides.


Serve with sautéed onions.

Serves four.
